There are many things to love about Lincolnshire, but our produce must be high on the list. Lincolnshire produces 30% of the nation’s vegetables and almost 20% of the poultry. So from this great county, 1/8th of the country’s food is produced. Amongst this are a wide array of artisan and small producers dedicated to supplying handmade, local delicacies. Grasmere Farm is proud to work with many of these producers, using their ingredients in our products or stocking them in our butchers shops and delis.

The Fame of the Lincolnshire Sausage

The most well-known, and arguably most loved, product from Lincolnshire is the Lincolnshire Sausage. Grasmere Farm is particularly famed for our Lincolnshire Sausages, which are expertly crafted with lean pork meat from our farm in south Lincolnshire. These sausages are meticulously prepared using traditional methods and Alf’s award-winning recipe.

It is thought that the Lincolnshire Sausage was first created in the 19th Century, but it is not known exactly when or by whom. The earliest recorded reference to a recipe for Lincolnshire Sausages was made in May 1886.

There are two things that make the Lincolnshire Sausage stand out from its fellow sausages – flavour and texture. Lincolnshire Sausages are flavoured with sage, giving them their distinctive taste. They also contain coarsely ground pork (other types of sausage use minced pork). This coarsely ground pork gives the Lincolnshire Sausage its unique, chunky texture.

Traditional Lincolnshire Sausages contain just six ingredients:

  • Coarsely ground Lincolnshire pork (minimum 70%, but we use 75%)
  • Breadcrumbs or rusk
  • Sage
  • Salt
  • Pepper
  • Sausage skin

Other Lincolnshire Delicacies from Grasmere Farm

Whilst Lincolnshire Sausage is the most famous specialty from our county, here at Grasmere Farm, we also produce other delicacies which have their origins in Lincolnshire.

Haslet

Originally made using offal, our Haslet is now produced using our famous Lincolnshire Sausage recipe. Hand made in our farmhouse kitchen, it is shaped into a loaf, covered in veil fat, and baked the traditional way. It’s incredibly popular in Lincolnshire and beyond due to its versatility, as it can be enjoyed cold with a salad or hot with mash and vegetables.

Stuffed Chine

We are also enjoying a boom in orders for Stuffed Chine, once a very popular traditional dish in Lincolnshire but following a decline in popularity, is now having something of a renaissance. We even supply it to Lincolnshire Co-op. Lincolnshire Stuffed Chine is made from the cured collar and packed with fresh parsley. When properly prepared by hand, it’s pleasing to the eye and taste, thanks to the beautiful contrast of the white fat, bright green parsley, and succulent pink pork. It is seldom found as it takes several weeks to produce but can be found at traditional butchers such as Grasmere Farm.

Grasmere Dough Cake

Finally, and we would be in big trouble if we did not mention it, is the Grasmere Dough Cake, a Lincolnshire Tea Loaf. The recipe used is an old family secret enjoyed by many. We heartily recommend picking one up from our Market Gate Deli with some farmhouse butter and a selection of local cheeses, there are plenty to choose from!
