Impress your family and friends with this succulent treat. Leg of Lamb is also tender and full of flavour and this mainade certainly enhances it’s flavour further.
Ingredients
- Butterflied Leg of Lamb
- Juice of two Lemons
- 1 chopped Onion
- 3 crushed cloves of Garlic
- 2 crushed Bay Leafs
- 2 tbsps chopped fresh Mint
- 10 crushed Peppercorns
- 5fl oz Olive Oil
Method
Step 1
Prepare the marinade with the Onion, Lemon Juice, Garlic, Bay Leafs, Mint, Peppercorns and Olive oil as described above and mix well in a bowl. Place Leg of Lamb flat in a tray.
Step 2
Drizzle over the marinade over the Leg of Lamb and turn over the Leg to cover both sides. Repeat until well marinated and then leave in the fridge for up to 24 hours for the best results.
Step 3
Remove the Marinaded Leg of Lamb from the fridge to get to room temperature. Barbecue on high heat / close to the heat for 5 minutes each side. Alternatively, cook in the centre of a pre-heated oven at 220°C, Gas Mark 8 for the same amount of time.
Step 4
On medium heat / 4 to 5 inches from the heat barbecue for approximately 15 minutes each side. Alternatively cook in the centre of an oven at 180°C, Gas Mark 4 for the same amount of time. Adjust time for pink or well-done meat.
Step 5
Allow to relax for 10 minutes before carving. Delicious served with yoghurt flavoured with garlic, lemon juice, fresh mint and seasoning.
