Our Lincolnshire Sausage with Beans Casserole is inexpensive to make and oh so tasty too! Feed the family with this scrumptious one-pot casserole that is quick and easy for those with busy mid-week schedules. Serves 3 – 4 people.
Ingredients
- 16 Lincolnshire Sausages chopped in half
- 2 Red Onions thinly sliced
- 800g Borlotti beans with juice
- 800g Cannellini beans with juice
- 400g Chopped Tomato (from can)
- 6 tbsp Olive Oil
- 3 tbsp Fresh Flat Parsley
- 1bsp Tomato Puree
- 1 tbsp fresh, chopped Rosemary
- Half tbsp Chilli Flakes
- Pinch of Fennel Seeds crushed
- Pinch of Salt and Pepper for seasoning
Method
STEP 1
Heat the oil in a large pan or flame proof casserole dish and heat at a high heat. Add sliced red onions, rosemary and chilli flakes. Add a pinch of salt and crushed fennel seeds and stir. Enjoy the mouth-watering aromas as the rosemary and fennel combine with the onion. Cook for about 10 minutes, stirring regularly.
STEP 2
Drain the excess juice from the beans but leave a good amount to help create the smooth, thick sauce. Meanwhile, cook the Sausages in a pan with a drop of oil and fry for about 10 minutes, just to brown the sausages off.
STEP 3
Add the beans, Sausages, chopped tomatoes and tomato puree to the casserole and bring to the boil. Then reduce the heat to medium and cook for a further 20 – 25 minutes, stirring frequently.
STEP 4
After 20 – 25 minutes, remove the heat to allow to rest and sprinkle the parsley over the casserole. Serve hot, with toasted crusty bread or garlic bread.
