Heat the oil in a large pan or flame proof casserole dish and heat at a high heat. Add sliced red onions, rosemary and chilli flakes. Add a pinch of salt and crushed fennel seeds and stir. Enjoy the mouth-watering aromas as the rosemary and fennel combine with the onion. Cook for about 10 minutes, stirring regularly.
Drain the excess juice from the beans but leave a good amount to help create the smooth, thick sauce. Meanwhile, cook the Sausages in a pan with a drop of oil and fry for about 10 minutes, just to brown the sausages off.
Add the beans, Sausages, chopped tomatoes and tomato puree to the casserole and bring to the boil. Then reduce the heat to medium and cook for a further 20 – 25 minutes, stirring frequently.
After 20 – 25 minutes, remove the heat to allow to rest and sprinkle the parsley over the casserole. Serve hot, with toasted crusty bread or garlic bread.
