Feed your family with this simple dish! This is a kid friendly recipe, but for those who want more heat, simply toss the shredded meat with hot sauce at the end.
Ingredients
- 1.7kg Grasmere rolled shoulder of Pork
- 4 tbsp brown sugar
- 2 tbsp cumin
- 1 tbsp paprika
- 1 tbsp chilli powder
- 1/2 tsp black pepper
Method
Step 1
Remove the skin off the Pork and lay flat. Pat dry the skin and rub salt and pepper into the skin and put back into the fridge.
Step 2
Combine the sugar, spice and herbs together and mix well. Rub the Pork Shoulder with the spice mix and place in a casserole dish.
Step 3
Heat the oven to 220Ā°C /gas 7/ 450Ā°F, then cook the pork for 30 minutes, uncovered. Turn down the heat to 140Ā°C/gas 1/ 275Ā°F, cover the meat and cook for a further 5 hours or until soft and tender. Turn the heat back up to 220Ā°C /gas 7/ 450Ā°F and cook uncovered for a further 10 minutes or until crisped up,
If cooked in a slow cooker, place in the pot, cover and cook until the pork is fork tender, about 6 or 8 hours on high 8-10 on low.
Step 4
When the pork is cooked, allow to rest for 10-30 minutes, covered in foil, then pull apart with forks. To crackle the skin, bring to room temperature and place under the grill on a high heat for 10 minutes.
Step 5
Serve the Pulled Pork as is, in soft rolls, perhaps tossed in a BBQ or hot sauce first with potatoes wedges and salad. Enjoy!
