Putting Cornish Yarg on a cheeseboard will not add a special interest because of looks but also brings with it, a wonderful fresh flavoured cheese with a crumbly texture. Pairs well with a variety of wines but try with a fruity White such as Chardonnay.
The original recipe for Yarg dates back to the 17th century and was rediscovered by Alan Gray in his attic on Bodmin Moor and is named after him (Yarg= Gray, backwards). Cornish Yarg is wrapped in nettles, which are picked from the Cornish countryside and completely edible. The leaves protect the cheese during the maturation process and allows the cheese to attract the moulds that creates the lace like appearance on the rind. A truly unique and special cheese.
Each piece is wrapped and then put in a bag. Keep refrigerated but best served at room temperature.
