One of the few cheeses made in the east of country. This multi award-winning cheese, is a hard pressed, full-fat cheddar style cheese but with an open texture. Strong earthy notes, with nutty, sweet tones. Pairs with a buttery slice of Lincolnshire Dough Cake and Chilli Jam.
Simon Jones is a fourth generation farmer, who decided to turn spring milk from his herd of Holsteins into cheese. Simon and his brother Tim, have been making cheese on their dairy farm, on the eastern edge of the Lincolnshire Wolds, for many decades. This award winning cheese is like a cross between traditional west country cheddar and continental alpine cheese but with subtle differences to give this cheese a unique cheddar flavour and slightly open texture.
Each piece is wrapped and then put in a bag. Keep refrigerated but best served at room temperature.
