Roasting: Preheat your oven to 180°C (160°C fan). Roast the lamb for 25 minutes per 500g, plus an additional 20 minutes for medium doneness. For extra tenderness, baste the meat every 30 minutes with its own juices.

Resting: Once cooked, let the lamb rest for 15 minutes. This allows the juices to redistribute, keeping the meat tender.
