A visually pleasing modern English cheddar, Red Windsor is laced with a mix of port and brandy or Bordeaux wine. This gives the cheddar a wonderful berry patterning and gives a depth and mix of flavours. It has the fruitiness of port and brandy and creamy cheesiness of semi-hard cheddar. Pair with any red wine and of course goes well with port.

Founded in 1911, Long Clawson Dairy’s history is rich in traditional Stilton making, at the heart of Stilton land. It is still a farming co-operative, just as it was when it started over 100 years ago.
